A friend of mine had a potluck this weekend so I decided to bring Spanish Tortilla. I hadn’t made it in a while. I used the Mark Bittman recipe that I posted earlier on this blog and it came out perfectly! At first I was afraid to flip the tortilla, so I used his trick of putting it in a 375 degree oven for a few minutes until the top firmed up a little. Then, because there was no way my tortilla was going to just “slide out” of the pan as Mark suggests, I put a plate directly on top of the skillet and flipped it that way — then slid it back in.
