With the warm weather and budding trees comes the mass exodus to the patio bar. I’m dreaming of spending my afternoons in the sun with friends and springy cocktails. Here are some recipes that caught my eye recently:

Lillet Rose Spring Cocktail

  • 6 ounces Lillet Rose
  • 6 ounces Ruby Red grapefruit juice
  • 3 ounces gin
  1. Combine all ingredients in a cocktail shaker with ice.
  2. Strain and serve in glasses. Serves 3

Spicy Grapefruit Margarita

Cayenne Simple Syrup

  • ½ cup sugar
  • ½ cup water
  • ¼ teaspoon cayenne pepper

Margarita

  • 4 ounces grapefruit juice
  • 2 ounces tequila
  • 1 ounce cayenne simple syrup
  • sea salt and cayenne mix or spice rub for glass rim
  • lime wedge
  1. Combine sugar, water, and cayenne in a small saucepan and bring to a simmer
  2. Heat until sugar is dissolved and cayenne is blended
  3. Cool in the fridge for an hour or so
  4. Run the lime wedge around the rim of the glass
  5. Dip the glass in the salt mixture/spice rub
  6. Combine tequila, simple syrup, and grapefruit juice in a cocktail shaker with ice
  7. Strain and serve

Pear Nectar & Thyme Mimosa

  • 1 chilled bottle of champagne, prosecco, or cava
  • 12 ounces pear nectar
  • 4 – 6 springs of fresh thyme
  1. Fill each glass with 3 ounces of pear nectar and a sprig of thyme
  2. Top the glasses with your choice of bubbly and enjoy

Sweet Paul’s Pimms Cup

  • 6 strawberries, halved
  • 3 slices lemon
  • 3 slices lime
  • cucumber, thinly sliced
  • 12 ounces ginger ale
  • 3 ounces Pimms No. 1
  1. Fill a glass with 2 strawberry halves, 1 lemon slice, 1 lime slice, some cucumber, and ice
  2. Add 1 ounce of Pimms, top off the glass with ginger ale, and stir. Serves 3

Rhubarb Mojito

Rhubarb Syrup

  • 8 ounces chopped rhubarb (2 – 3 small stalks)
  • 1 cup sugar
  • 2 cups water
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ½ vanilla bean (optional)
  1. Combine all the ingredients in a small saucepan. Bring to a boil then reduce to a simmer. 
  2. Simmer for 5 – 7 minutes and then let cool completely
  3. Strain the ingredients

Mojito

  • 1 ounce white rum
  • 2 ounces rhubarb syrup
  • 5 mint leaves
  • 1 tablespoon lime juice
  • lime zest
  • nutmeg
  1. In the bottom of a glass add a little nutmeg, lime zest, mint leaves, and the lime juice. Muddle the ingredients until the leaves are broken up and crushed. 
  2. Add the rum and syrup, then add ice.
  3. Garnish with mint and a slice of rhubarb. Serves 1

Gin & Tonic Sorbet

  • ½ cup water
  • ½ cup sugar
  • juice and zest of two limes
  • 2½ cups tonic water
  • ½ cup gin
  1. Combine the water and sugar in a small saucepan. Let simmer and stir until the sugar has dissolved 
  2. Add the grated lime zest and lime juice to the syrup and let it cool completely
  3. Add the tonic water and gin and then strain the mixture through a sieve and into an ice cream maker
  4. Follow your ice cream maker’s instructions on how to make sorbet. Yields 1 liter

Prickly Pear Mezcal Mule

  • 2 ounces lime juice
  • ½ jalapeño (optional)
  • 2 ounces Mezcal
  • 6 ounces ginger beer
  • 1 ounce prickly pear syrup
  • lime and salt for rimming the glass
  • jalapeño slices for garnish
  1. Sprinkle salt on a plate, rim the glasses with lime, dip the rim of the glasses in the salt and set aside.
  2. Muddle the lime juice and jalapeño in a cocktail shaker until well combined
  3. Add the Mezcal, some ice, and the prickly pear syrup and shake until combined.
  4. Strain into the rimmed glasses and top with ginger beer.
  5. Garnish with jalapeño slices if you dare! Serves 2
